I would take issue with the ‘gas canister’ bit – absolutely not kosher IMHO. Hunt down boar, light big fire and roast it is the OZ way, but Ms Jardine seems to be taking her first tentative steps towards The Faith.

OZ: Gas canister! what does one do with that, gas the hog? I built my Pig Cooker in 1987 and it has been in frequent use ever since. 80 lbs of hardwood charcoal usually will suffice for the largest specimen. I do agree that faster/hotter cooking makes a better product, my unit usually runs about 400F at peak temperature. Total time from cold to carve is about six hours. I’m feeling hungry already, I may have to go visit my friend the butcher.
